Beef & Pork Chili
Serves 6-8
2 Lb beef chuck, cut into 11/2" cubes
2 Lg onions, chopped finely
3 Tbsp butter
3 Tbsp olive oil
5 cloves garlic, finely chopped
2 Tsp Salt
3 Tbsp chili powder
1/2 Tsp oregano
1/2 Tsp ground cumin
1 cp tomato puree
2 cps beef or chicken broth
2 Tbsp sesame seeds
1/2 oz of unsweetened chocolate (optional)
Flour
Cover meat lightly in flour. Sauté onion in butter and olive oil until
golden. Add the chopped garlic and cook 3-4 minutes. Push the
onion and garlic to on side of the pan and quickly sear the beef
cubes. When browned, remove from the pan and brown the pork
thoroughly. Return the beef to pan and add salt, chili powder,
oregano, cumin, tomato puree, and broth. Cover and simmer, or
cook in a 300 degree oven for 11/2 hours. Then add the sesame
seeds and chocolate(if desired) Stir in well and simmer another
30minutes.
Chocolate acts as a liaison that pulls flavors together, and is a
slight thickener. |
