Black Bean Chili

Serves 6

4 Lg onions, chopped
1 Lg green bell pepper, chopped
3 Tbsp vegetable oil
1 Tbsp minced garlic
1 16oz can chili style stewed tomatoes
3 16oz cans of black beans
1 cp water
1 6oz can tomato paste
1 Tbsp chili powder
1 Tsp cumin
1 Lg tomato chopped
1/2 cp chopped green chilies
1/2 cp chopped onion
1 cp chopped jalapenos

Sauté 4 onions and green pepper in oil in a saucepan over medium-high heat until tender. Add garlic and mix well, sauté for 1 minute Sir in undrained canned tomatoes, undrained beans, water, tomato paste, chili powder and cumin. Simmer for 45 minutes, stirring occasionally.
