Colorful Chili

Serves 4-6

1 Lg onion
8 medium garlic cloves
2 red bell peppers
3 Tbsp olive oil
3 Tbsp chili powder
1 Tbsp ground cumin
1 Tsp round coriander
3 15oz cans diced tomatoes untrained
1 4oz can diced mild green chilies
1 15oz can kidney beans drained
1 15oz can black beans drained
1 15oz can pinto beans drained
1 10oz package of baby corn
1 ½ Tbsp chopped semisweet chocolate
4 Tbsp cilantro chopped
2 Tsp fresh or bottled lime juice
2 Tsp Salt
1 Tsp cayenne pepper

Heat olive oil in pot on medium-high heat 2-3minutes. Add onion and garlic and sauté until softened. Add chili powder, and cumin sauté for another 1-2 minutes. Add tomatoes and green chilies and cook, stirring occasionally for 10minutes. Add bell peppers, beans and corn. Reduce heath to medium-low and simmer, stirring occasionally, for 30 minutes. Add chocolate and cilantro and simmer for an additional 1-2 minutes.
