Hot Weather Chili
Serves 8-10
3 chopped shallots
2 chopped garlic cloves
3 peeled avocados
2 cps chicken broth
2 cp diced tomatoes
2 cp plain yogurt
½ cp sour cream
½ cp light cream
¼ cp dry sherry
¼ cp fresh chopped cilantro
1Tsp cumin
1Tbsp chili powder
¼ Tsp white pepper
1 Lg gar green salsa
1 5oz can diced green chilies
1 15oz can butter beans
In a food processor, puree the shallots, garlic, avocados and
chicken broth for 30 seconds until smooth. Pour into a large bowl.
Process the tomatoes with the yogurt, light cream, sour cream
and sherry for 15seonds. Add herbs and spices and process for
20 seconds. Pour in a large bowl and mix with other ingredients.
Stir in the green salsa and chilies. Mix well. Chill overnight. |
