Zero Alarm Chili
Serves 4-6
1 Tbsp Olive Oil
1 Lb yellow Squash, peeled and cut into ½ inch cubes
1/3 cp chili powder
1 Tsp onion powder
1 Tsp garlic powder
1 Tsp ground cumin
½ Tsp ground cinnamon
½ Tsp ground green pepper
½ Tsp cayenne Pepper
½ Tsp Oregano
2 14 oz cans Mexican-style stewed tomatoes
1 19oz can red kidney beans drained
1 16oz can small white beans drained
1 15oz can black beans drained
1cp water
Heat oil in skillet over medium-high heat. Add squash and spices;
cook 4-5minutes, stirring frequently until squash is tender and well
spice. Stir I stewed tomatoes, beans and water bring to a boiling.
Reduce heat to low, simmer uncovered 15minutes , stirring
occasionally until mixture is thickened and flavors are blended. |
